I Am The Sauce

I Am The Sauce (aka Remoulade or Po Boy Sauce)

1 1/4 cups mayonnaise
1/4 cup dijon mustard
1 tablespoon sweet paprika
2 teaspoons Creole seasoning (See below)
teaspoons prepared horseradish
teaspoon pickle juice
1 teaspoon hot sauce (preferably Tabasco)
large clove garlic, minced and smashed (1 teaspoon garlic paste)

Creole Seasoning 

4 teaspoons garlic powder
4 teaspoons onion powder
2 tablespoons sweet paprika
1 teaspoon smoked paprika
1 tablespoon dried thyme
2 teaspoons dried oregano
2 teaspoons dried basil
2 teaspoons cayenne pepper (or less if you don’t want it as hot)
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
